Oat Banana Chocolate Chip "Cookies"
Recipe by Allison Ruben (MS '22)
Don't throw away your overripe bananas – make these "cookies" instead!
Ingredients
- 2 or more ripe bananas
- 1 cup of oats
- Chocolate chips as desired
- 2 tablespoons of nut butter
- Cinnamon as desired
- Coconut oil for greasing the pan
Instructions
- Mash two ripe bananas into a medium-sized bowl until fairly smooth.
- Mix in one cup of oats (if you have more than two bananas, make sure your banana to oat ratio is 2:1).
- Mix in chocolate chips to your liking.
- Add in two tablespoons of any nut butter you like (add two tablespoons for every two bananas, or to your liking – if you don’t want to add any nut butter you don’t have to).
- Add cinnamon to your liking.
- Grease a cookie sheet with coconut oil and scoop mixture onto the sheet. You can make the cookies however big or small you would like – they won't spread on the cookie sheet while baking.
- Bake the cookies at 350 degrees for 15-20 minutes if they’re on the small side or 20-25 minutes if they’re on the larger side (for your reference, the cookies pictured on this page are on the larger side).
