Caesar Salad

Paula Rubello (MS '21)

Making salad dressing from scratch can be a desirable alternative to store-bought options with added sugar.

Ingredients

Dressing

  • 1 can of anchovies in their olive oil
  • Juice of 1/2 lemon
  • 1 tablespoon of mustard
  • About 2 tablespoons of olive oil

Salad

  • Romaine lettuce
  • Grilled chicken breast
  • Cherry tomatoes
  • Parmesan cheese

Croutons

  • Your favorite bread
  • Olive oil
  • Garlic powder
  • Pepper
  • Dried oregano

Instructions

  1. To make the dressing, blend anchovies, lemon juice, mustard, and olive oil until creamy.
  2. Assemble your salad by combining the lettuce, chicken, cherry tomatoes, and parmesan cheese.
  3. If desired, make homemade croutons by slicing your favorite bread into squares and tossing them with olive oil, garlic powder, pepper, and dried oregano before toasting for two minutes. Add the croutons to the salad.
  4. Pour dressing on top of the salad and enjoy!
