Oat Banana Chocolate Chip "Cookies"

Don't throw away your overripe bananas  make these "cookies" instead!

Ingredients

  • 2 or more ripe bananas 
  • 1 cup of oats
  • Chocolate chips as desired
  • 2 tablespoons of nut butter
  • Cinnamon as desired
  • Coconut oil for greasing the pan

Instructions

  1. Mash two ripe bananas into a medium-sized bowl until fairly smooth.
  2. Mix in one cup of oats (if you have more than two bananas, make sure your banana to oat ratio is 2:1).
  3. Mix in chocolate chips to your liking. 
  4. Add in two tablespoons of any nut butter you like (add two tablespoons for every two bananas, or to your liking – if you don’t want to add any nut butter you don’t have to).
  5. Add cinnamon to your liking.
  6. Grease a cookie sheet with coconut oil and scoop mixture onto the sheet. You can make the cookies however big or small you would like – they won't spread on the cookie sheet while baking.
  7. Bake the cookies at 350 degrees for 15-20 minutes if they’re on the small side or 20-25 minutes if they’re on the larger side (for your reference, the cookies pictured on this page are on the larger side).
